Terroir and Growing Conditions
Yirgacheffe sits at 1,900 to 2,200 meters above sea level in Ethiopia's Southern Nations region. The high altitude, cool temperatures, and rich volcanic soil create ideal conditions for slow cherry maturation, which develops the dense, complex acids that define Yirgacheffe's character. Most production comes from smallholder farmers cultivating heirloom varieties under native shade canopy — a traditional agroforestry system that sustains both coffee quality and biodiversity.
Flavor Profile and Cupping Notes
Yirgacheffe washed coffee is defined by its aromatic intensity. Expect jasmine and honeysuckle fragrance, bergamot and lemon zest acidity, and a tea-like body with peach and apricot sweetness in the finish. The best lots achieve an almost perfume-like complexity that makes Yirgacheffe the go-to origin for roasters seeking floral single-origin offerings. Processing and Preparation
Yirgacheffe is predominantly washed-processed. Cherries are pulped within hours of harvest, fermented for 36 to 72 hours in clean water tanks, and dried on raised African beds for 10 to 14 days. This meticulous wet processing is what produces Yirgacheffe's hallmark clarity and brightness. PyraBrew partners with washing stations that maintain strict cherry selection — only fully ripe red cherries are accepted, with rigorous sorting at intake to remove underripe and overripe fruit.
Export Specifications
PyraBrew exports Yirgacheffe in Grade 1 (zero primary defects, <3 secondary defects per 300g sample) and select Grade 2 lots. Standard packing is 60kg GrainPro-lined jute bags. Screen size is predominantly 15+ with moisture content maintained between 10 and 12 percent. Available in full container (19 MT) and micro-lot (5+ bags) quantities. Pre-shipment samples are dispatched via international courier before any contract is confirmed.

The 2026 Yirgacheffe harvest faces reduced yields due to climate stress affecting flowering patterns in early 2025. Competition for true Grade 1 washed lots will be intense.
